Orzo with Caramelized Fall Vegetables and Ginger

Ingredients
  

Pasta
  • 1 cup Orzo Uncooked
Vegetables
  • 1 cup Butternut Squash Diced
  • 1 cup Brussels Sprouts Halved
  • 1 cup Carrots Sliced
  • 1 medium Red Onion Sliced
Aromatics
  • 2 cloves Garlic Minced
  • 1 tablespoon Fresh Ginger Grated
Seasoning
  • 2 tablespoons Olive Oil For roasting
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Thyme Fresh or dried
Garnish
  • 1/4 cup Parmesan Cheese Grated
  • 2 tablespoons Fresh Parsley Chopped

Method
 

Prepare the Vegetables
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the butternut squash, Brussels sprouts, carrots, and red onion with olive oil, salt, pepper, and thyme.
  3. Spread the vegetables on a baking sheet and roast for 25-30 minutes, or until caramelized and tender.
Cook the Orzo
  1. While the vegetables are roasting, bring a large pot of salted water to a boil.
  2. Add the orzo and cook according to package instructions until al dente, about 8-10 minutes.
  3. Drain and set aside.
Combine and Serve
  1. In a skillet, heat a little olive oil over medium heat and sauté the garlic and ginger until fragrant, about 1 minute.
  2. Add the roasted vegetables and cooked orzo to the skillet, tossing to combine.
  3. Serve warm, garnished with grated Parmesan cheese and chopped parsley.
