Preparation
- Preheat your smoker to 225°F (107°C).
- Mix all the rub ingredients in a bowl.
- Rub the mixture all over the brisket or chuck roast, ensuring an even coating.
Smoking
- Place the meat in the smoker and smoke for about 4 hours, or until it reaches an internal temperature of 190°F (88°C).
- Wrap the meat in aluminum foil and continue to cook for another hour.
Finishing
- Remove the meat from the smoker and let it rest for 30 minutes.
- Cut the meat into 1-inch cubes.
- Toss the cubes in a bowl with the barbecue sauce, honey, and apple cider vinegar.
- Return the sauced cubes to the smoker for an additional 30 minutes to caramelize.
