Prepare the Ingredients
- Trim excess fat from the chuck roast and season it with salt and black pepper.
- Chop the vegetables into chunks and set aside.
Sear the Roast
- In a skillet over medium-high heat, sear the roast on all sides until browned, about 3-4 minutes per side.
Combine in Crock Pot
- Place the chopped vegetables in the bottom of the crock pot.
- Add the seared roast on top of the vegetables.
- Pour the beef broth and Worcestershire sauce over the roast, and sprinkle thyme on top.
Cook
- Cover and cook on low for 8 hours or until the meat is tender and easily shreds with a fork.
Serve
- Remove the roast and vegetables from the crock pot, slice the roast, and serve with the vegetables.
