Pot Roast in Crock Pot

Ingredients
  

Beef
  • 3 pounds chuck roast trimmed of excess fat
Vegetables
  • 4 medium carrots peeled and cut into chunks
  • 3 medium potatoes peeled and cut into chunks
  • 1 large onion chopped
  • 3 cloves garlic minced
Liquids and Seasonings
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Prepare the Ingredients
  1. Trim excess fat from the chuck roast and season it with salt and black pepper.
  2. Chop the vegetables into chunks and set aside.
Sear the Roast
  1. In a skillet over medium-high heat, sear the roast on all sides until browned, about 3-4 minutes per side.
Combine in Crock Pot
  1. Place the chopped vegetables in the bottom of the crock pot.
  2. Add the seared roast on top of the vegetables.
  3. Pour the beef broth and Worcestershire sauce over the roast, and sprinkle thyme on top.
Cook
  1. Cover and cook on low for 8 hours or until the meat is tender and easily shreds with a fork.
Serve
  1. Remove the roast and vegetables from the crock pot, slice the roast, and serve with the vegetables.
