Ingredients
  

Salad Base
  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 can black beans drained and rinsed
  • 1 cup cherry tomatoes halved
  • 1 cup corn fresh or frozen
  • 1 medium avocado diced
  • 1/4 cup cilantro chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice freshly squeezed
  • 1 teaspoon cumin
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare Quinoa
  1. In a pot, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Remove from heat and let it sit covered for 5 minutes.
Mix Salad
  1. In a large bowl, combine cooked quinoa, black beans, cherry tomatoes, corn, avocado, and cilantro.
Make Dressing
  1. In a small bowl, whisk together olive oil, lime juice, cumin, salt, and pepper.
Combine
  1. Pour the dressing over the salad and toss gently to combine. Serve immediately or chill in the refrigerator for 30 minutes before serving.
