Ingredients
  

Wrap Ingredients
  • 8 sheets rice paper round
  • 1 cup cooked shrimp peeled and deveined
  • 1 cup vermicelli noodles cooked
  • 1 cup shredded carrots
  • 1 cup cucumber julienned
  • 1 cup fresh mint leaves
  • 1 cup fresh cilantro
Dipping Sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon peanut butter
  • 1 teaspoon honey
  • 1 teaspoon lime juice

Method
 

Prepare the Ingredients
  1. Soak the rice paper sheets in warm water for about 10-15 seconds until soft.
  2. Lay the softened rice paper on a clean cutting board.
  3. Place a small amount of shrimp, vermicelli noodles, carrots, cucumber, mint, and cilantro in the center of the rice paper.
Wrap the Ingredients
  1. Fold the bottom of the rice paper over the filling, then fold in the sides and roll tightly to form a wrap.
  2. Repeat with the remaining rice paper sheets and filling ingredients.
Prepare the Dipping Sauce
  1. In a small bowl, mix together soy sauce, peanut butter, honey, and lime juice until smooth.
Serve
  1. Serve the rice paper wraps with the dipping sauce on the side.
