Ingredients
  

Vegetables
  • 2 cups carrots chopped
  • 1 cup celery chopped
  • 1 cup red bell pepper chopped
  • 1 cup zucchini chopped
  • 1 cup onion chopped
  • 4 cloves garlic minced
Liquids
  • 4 cups vegetable broth
  • 2 tablespoons olive oil for roasting
Seasoning
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil

Method
 

Roasting the Vegetables
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the chopped vegetables and garlic with olive oil, salt, pepper, thyme, and basil.
  3. Spread the vegetables evenly on a baking sheet and roast for 25-30 minutes, or until tender and slightly caramelized.
Blending the Soup
  1. Transfer the roasted vegetables to a large pot and add the vegetable broth.
  2. Bring to a simmer over medium heat and cook for 10 minutes.
  3. Use an immersion blender or transfer to a blender to puree the soup until smooth.
  4. Adjust seasoning if necessary and serve hot.
