Ingredients
  

For the Shrimp
  • 1 pound shrimp peeled and deveined
  • 2 tablespoons olive oil for grilling
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Mango Salsa
  • 1 cup mango diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup red bell pepper diced
  • 1/4 cup cilantro chopped
  • 1 lime juice freshly squeezed
  • 1/4 teaspoon salt
For Assembly
  • 2 large avocados sliced
  • 2 cups cooked rice white or brown

Method
 

Prepare the Shrimp
  1. In a mixing bowl, combine shrimp, olive oil, garlic powder, paprika, salt, and black pepper. Toss to coat.
  2. Preheat the grill to medium-high heat. Grill the shrimp for 2-3 minutes on each side until cooked through and opaque.
Make the Mango Salsa
  1. In a separate bowl, combine diced mango, red onion, red bell pepper, cilantro, lime juice, and salt. Mix well and set aside.
Assemble the Bowls
  1. In serving bowls, layer cooked rice, sliced avocado, and grilled shrimp.
  2. Top with mango salsa and serve immediately.
