  • 1/3 cup apple cider molasses
  • 1/2 cup vegetable oil
  • 3/4 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
Dry Ingredients
  • 1/4 tsp salt
  • 1/4 tsp ground cloves
  • 1/2 tsp ground ginger
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar for garnish

Method
 

Cooking Process
  1. Place 4 cups of apple cider into a saucepan. Heat the cider to a boil over medium/high heat. Once boiling, reduce heat to medium/low and let simmer until it reduces to a thick molasses, about 3-4 hours.
  2. Once reduced to 1/3 of a cup, let it sit at room temperature as you prepare the cookie dough.
  3. Preheat oven to 350 degrees. Line a cookie sheet with parchment paper.
  4. In a large bowl, add vegetable oil, brown sugar, and granulated sugar. Mix on medium until combined.
  5. Add the egg and cider molasses to the mixture and mix on medium until incorporated.
  6. In a separate bowl, sift all the dry ingredients. Pour them into the wet mixture and mix on low until combined.
  7. Scoop the dough and roll it in the 1/4 cup of granulated sugar. Place on the cookie sheet, spacing them 2 inches apart.
  8. Bake for 14 minutes until golden brown. Allow to cool on the baking pan for about 5 minutes before moving to a cooling rack to finish cooling.
