Ingredients
  

Main Ingredients
  • 2 pounds Neck Bones Cut into pieces
  • 1 tablespoon Olive Oil For browning
  • 1 large Onion Chopped
  • 2 cloves Garlic Minced
  • 2 cups Chicken Broth Low sodium preferred
  • 2 medium Carrots Sliced
  • 2 stalks Celery Chopped
  • 1 teaspoon Thyme Dried
  • 1 teaspoon Paprika
  • 1 teaspoon Black Pepper Freshly ground
  • 1 teaspoon Salt To taste

Method
 

Preparation
  1. Heat olive oil in a large pot over medium heat. Add neck bones and brown on all sides.
  2. Remove neck bones and set aside. In the same pot, add onion and garlic, sauté until translucent.
  3. Add carrots and celery, cooking for another 5 minutes.
Cooking
  1. Return neck bones to the pot, add chicken broth, thyme, paprika, black pepper, salt, and bay leaf.
  2. Bring to a boil, then reduce heat to low and cover. Simmer for 1.5 to 2 hours until meat is tender.
  3. Remove bay leaf before serving. Adjust seasoning if necessary.
