Method

Preparation
  1. Pat the chicken dry and dice into small bite-sized pieces. Add the chicken to a large bowl and combine with the marinade ingredients: oil, seasonings, lime juice, and chipotle pepper. Mix well and let sit for 15 minutes up to 24 hours.
  2. Cook the rice according to the package instructions and prepare all wrap ingredients, including the sauce.
Cooking
  1. To make the sauce, blend all sauce ingredients in a high-speed blender until smooth.
  2. In a skillet, sauté the marinated chicken on medium heat for 12-15 minutes until cooked through, then set aside.
  3. Wipe the pan clean, add chopped peppers and onions with 0.5 tsp of oil, and sauté for 8 minutes. Add garlic, turn down the heat, and reintroduce the chicken, warming slightly.
  4. Heat up the tortillas, then stuff them with rice, chicken, veggies, beans, corn, cheese, and a generous drizzle of sauce.
  5. Wrap the ingredients tightly like a burrito. Add more sauce as needed and enjoy!
