Ingredients
  

Rice and Vegetables
  • 1 cup long-grain white rice rinsed
  • 2 cups vegetable broth
  • 1 medium onion chopped
  • 1 medium bell pepper chopped
  • 1 cup tomato diced
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 tablespoon olive oil

Method
 

Cooking Spanish Rice
  1. In the rice cooker, add olive oil and sauté the chopped onion, bell pepper, and garlic until softened.
  2. Add the rinsed rice, diced tomato, vegetable broth, cumin, paprika, salt, and black pepper to the rice cooker.
  3. Stir to combine all ingredients well.
  4. Close the lid and set the rice cooker to the 'white rice' setting or cook for about 25 minutes.
  5. Once cooked, let it sit for 5 minutes before fluffing with a fork and serving.
