Ingredients

  • 1 dash salt
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon white pepper
  • 1 tablespoon hot Hungarian paprika or regular
  • 1 tablespoon slap yo mama seasoning or Cajun seasoning
  • 1.5 cups buttermilk for marinating
Coating Mix
  • 2 cups flour
  • 4 tablespoons cornstarch
  • 1.5 tablespoons slap yo mama seasoning or Cajun seasoning
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon paprika
Egg Mixture
  • 2 pieces eggs
  • 1 tablespoon Franks hot sauce
  • 1 cup buttermilk
Final Assembly
  • as needed brioche buns
  • as needed tablespoons vegetable oil for deep frying
  • 0.25 cup mayo
  • 0.25 teaspoon cayenne pepper for spicy mayo

Method
 

Marinating Chicken
  1. In a large bowl, season chicken breast with salt, onion powder, garlic powder, paprika, slap yo mama seasoning, white pepper, and buttermilk. Marinate for 30 minutes to 2 hours.
Preparing Oil
  1. Heat a large deep pot with oil and slowly heat up to 350°F; insert a wooden spoon and wait until the oil starts to bubble.
Mixing Coating
  1. For the flour mixture, mix flour, cornstarch, onion powder, garlic powder, paprika, and slap yo mama seasoning. Set aside.
Mixing Egg Batter
  1. For the egg mixture, mix eggs, Franks hot sauce, and buttermilk.
Frying Chicken
  1. Remove chicken from the refrigerator after marinating. Remove chicken one by one from buttermilk, ensuring to remove as much buttermilk as possible.
  2. Dip chicken in the egg mixture, then in the flour, and fry for 12-15 minutes or until golden brown.
Toasting Buns
  1. In a medium-size pan, coat buns with butter and pan fry until golden brown.
Assembling Sandwiches
  1. Place chicken on the bun with spicy mayo and pickles.
