For the Salad
  • 4 cups mixed salad greens A blend of baby spinach and arugula.
  • 2 cups strawberries Fresh, sliced strawberries.
  • 1 cup feta cheese Crumbled feta cheese.
  • 1/2 cup walnuts Chopped walnuts.
For the Dressing
  • 1/4 cup olive oil Can substitute with avocado oil.
  • 2 tablespoons balsamic vinegar Can substitute with red wine vinegar.
  • 1 tablespoon honey Can substitute with maple syrup.
  • 1/2 teaspoon salt Use sea salt for a refined taste.
  • 1/4 teaspoon black pepper Adjust to taste.

Method
 

Preparation
  1. Wash the fresh strawberries thoroughly under cool water. Pat them dry and slice them into halves or quarters.
  2. In a large salad bowl, combine a generous handful of mixed greens like arugula or spinach.
  3. Gently fold in the sliced strawberries with the greens.
  4. Sprinkle crumbled feta cheese over the top of your salad.
  5. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper until well combined.
  6. Drizzle the dressing over the salad just before serving and toss lightly.
