Strawberry Sourdough Rolls

Deliciously soft and tangy sourdough rolls filled with fresh strawberries, perfect for breakfast or a snack.

Ingredients
  

Dough
  • 500 g bread flour
  • 300 g active sourdough starter at 100% hydration
  • 250 ml water room temperature
  • 10 g salt
  • 20 g sugar
Filling
  • 200 g fresh strawberries hulled and chopped
  • 30 g sugar for macerating strawberries
  • 1 tsp vanilla extract
Topping
  • 1 egg egg wash beaten
  • 10 g sugar for sprinkling

Method
 

Prepare the Dough
  1. In a mixing bowl, combine the bread flour, sourdough starter, water, salt, and sugar. Mix until a shaggy dough forms.
  2. Knead the dough for about 10 minutes until smooth and elastic. Place in a lightly greased bowl, cover, and let rise for 2 hours or until doubled in size.
Prepare the Filling
  1. In a separate bowl, combine the chopped strawberries, sugar, and vanilla extract. Let sit for 15 minutes to macerate.
Shape the Rolls
  1. Once the dough has risen, turn it out onto a floured surface. Roll it into a rectangle about 1/2 inch thick.
  2. Spread the macerated strawberries evenly over the dough. Roll the dough tightly into a log and cut into 12 equal pieces.
  3. Place the rolls on a baking sheet lined with parchment paper. Cover and let rise for another hour.
Bake the Rolls
  1. Preheat the oven to 375°F (190°C). Brush the tops of the rolls with the beaten egg and sprinkle with sugar.
  2. Bake for 20-25 minutes or until golden brown. Let cool slightly before serving.
