Method
Prepare the Peppers
- Preheat the oven to 375°F (190°C). Cut the banana peppers in half lengthwise and remove the seeds.
Make the Filling
- In a mixing bowl, combine cooked rice, black beans, corn, shredded cheese, cumin, chili powder, olive oil, salt, and black pepper. Mix well.
Stuff the Peppers
- Stuff each banana pepper half with the filling mixture and place them in a baking dish.
Bake
- Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 5 minutes until the cheese is bubbly.
Serve
- Serve hot, topped with salsa and garnished with fresh cilantro.
