Ingredients
  

Filling
  • 4 pieces Banana Peppers Halved and seeded
  • 1 cup Cooked Rice Can use white or brown rice
  • 1 cup Black Beans Drained and rinsed
  • 1 cup Corn Frozen or canned
  • 1 cup Shredded Cheese Cheddar or Monterey Jack
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Topping
  • 1 cup Salsa For serving
  • 1 tablespoon Fresh Cilantro Chopped, for garnish

Method
 

Prepare the Peppers
  1. Preheat the oven to 375°F (190°C). Cut the banana peppers in half lengthwise and remove the seeds.
Make the Filling
  1. In a mixing bowl, combine cooked rice, black beans, corn, shredded cheese, cumin, chili powder, olive oil, salt, and black pepper. Mix well.
Stuff the Peppers
  1. Stuff each banana pepper half with the filling mixture and place them in a baking dish.
Bake
  1. Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 5 minutes until the cheese is bubbly.
Serve
  1. Serve hot, topped with salsa and garnished with fresh cilantro.
