Sugared (Tanghulu-style) Strawberries

These candied strawberries are a delightful treat that combines juicy fruit with a crunchy, sweet glaze, perfect for any occasion.

Ingredients
  

  • 16 pieces strawberries washed and dried
  • 250 g granulated sugar
  • 125 g water
  • red food colouring optional

Equipment

  • Bamboo or lollipop sticks
  • small pot
  • Candy thermometer
  • parchment paper
  • baking sheet

Method
 

  1. Wash strawberries and dry them completely. Skewer strawberries on bamboo or lollipop sticks.
  2. Line a large plate or baking sheet with parchment paper and set aside.
  3. In a small pot over medium heat, combine sugar and water. Allow the sugar to melt without stirring.
  4. Once the syrup boils and turns a very light golden colour (150C on a candy thermometer, about 8 – 10 minutes), turn off the heat. Use the 'cold water test' to check readiness.
  5. Stir in a few drops of red food colouring now if using.
  6. Tilt the pot slightly, dip a strawberry into the syrup, and turn the stick gently to cover the strawberry completely. Allow excess syrup to drip off and place the sugared strawberry on the baking sheet. Repeat until all the strawberries are sugared.
  7. Allow the sugar coating to harden completely before removing from the baking sheet, about 10 minutes.
  8. Serve immediately.
