Swiss Chard Rolls with Rice and Beef

Ingredients
  

Filling
  • 1 cup Rice Uncooked
  • 1 lb Ground Beef Lean
  • 1 medium Onion Chopped
  • 2 cloves Garlic Minced
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Paprika
  • 1 tbsp Olive Oil For sautéing
Swiss Chard
  • 12 leaves Swiss Chard Stems removed
Sauce
  • 1 can Tomato Sauce 15 oz
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil
  • 1 tbsp Sugar To balance acidity

Method
 

Prepare the Filling
  1. In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.
  2. Add ground beef, salt, pepper, and paprika. Cook until browned. Stir in uncooked rice and remove from heat.
Prepare the Chard
  1. Blanch Swiss chard leaves in boiling water for 2-3 minutes until softened. Drain and cool.
  2. Lay each leaf flat and place a portion of the filling at the base of the leaf. Roll tightly, tucking in the sides.
Assemble and Bake
  1. Preheat oven to 350°F (175°C). Spread a thin layer of tomato sauce on the bottom of a baking dish.
  2. Place the rolled chard in the dish seam side down. Top with remaining tomato sauce, oregano, basil, and sugar.
  3. Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes.
