A delicious and easy tart cherry crisp topped with a crunchy oat and almond topping.

Ingredients
  

Filling
  • 4 cups tart cherries, pitted fresh or frozen
  • 1 cup granulated sugar adjust to taste
  • 2 tablespoons cornstarch for thickening
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
Topping
  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar packed
  • 1/2 cup butter, melted
  • 1/2 cup sliced almonds optional

Method
 

Prepare the Filling
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine tart cherries, granulated sugar, cornstarch, vanilla extract, and lemon juice. Mix well and set aside.
Prepare the Topping
  1. In another mixing bowl, combine rolled oats, flour, brown sugar, and melted butter. Mix until crumbly. Stir in sliced almonds if using.
Assemble and Bake
  1. Spread the cherry mixture evenly in a baking dish. Sprinkle the oat topping over the cherries. Bake for 30 minutes or until the topping is golden brown and the cherries are bubbling.
Serve
  1. Let cool slightly before serving. Enjoy warm, optionally with vanilla ice cream.

Notes

This crisp can be made with other fruits as well, such as blueberries or peaches.
