Ingredients
  

For the Pie Crust
  • 2 cups all-purpose flour Use a gluten-free blend for a suitable alternative.
  • 1 cup unsalted butter Cold butter is key for that perfect crust.
  • 1/4 cup granulated sugar You can reduce this if you prefer less sweetness.
  • 1 teaspoon salt Enhances all the flavors in the crust.
  • 6-8 tablespoons ice water Only add as needed.
For the Cherry Filling
  • 4 cups fresh or frozen cherries Look for ripe, dark cherries for the best flavor.
  • 3/4 cup granulated sugar Adjust to taste depending on cherry sweetness.
  • 2 tablespoons cornstarch Can be substituted with tapioca starch if desired.
  • 1 tablespoon lemon juice Fresh is best!
  • 1 teaspoon vanilla extract Feel free to use almond extract for a twist.
For the Topping (optional)
  • 1 egg egg wash Whisk an egg with a splash of water.
  • 1 tablespoon sugar for sprinkling Coarse sugar works wonders here.

Method
 

Prepare the crust
  1. Begin by mixing flour, salt, and butter until crumbly. Gradually add ice water until the dough forms. Chill for 30 minutes to firm up.
Roll out the dough
  1. Lightly flour your surface and roll out half of the chilled dough into a circle about 12 inches in diameter. This will be your bottom crust.
Fit the crust
  1. Carefully place the rolled-out dough into a 9-inch pie pan, pressing it gently against the sides. Trim any excess, leaving about an inch overhang.
Make the filling
  1. In a bowl, combine pitted cherries, sugar, cornstarch, lemon juice, and vanilla extract. Stir gently until all cherries are well coated and juicy.
Fill the crust
  1. Pour the cherry filling into the prepared crust, spreading it evenly. Dot with small pieces of butter for added richness.
Top with second crust
  1. Roll out the remaining dough and place it over the filling. Crimp edges to seal and cut slits in the top for steam to escape.
Bake the pie
  1. Preheat your oven to 425°F and bake for 15 minutes. Then reduce temperature to 350°F and continue baking for another 25-30 minutes until golden brown.
Cool and serve
  1. Let your pie cool on a wire rack for at least an hour before slicing. This ensures that your filling sets beautifully!
