Ingredients

Chicken and Orzo
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 cup orzo pasta
  • 2 tablespoons olive oil for cooking
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Vegetables and Sauce
  • 1 cup cherry tomatoes halved
  • 1 cup baby spinach
  • 2 cloves garlic minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup parmesan cheese grated

Method

Cook the Chicken
  1. In a large skillet, heat olive oil over medium heat. Add the chicken pieces, Italian seasoning, salt, and pepper. Cook until the chicken is browned and cooked through, about 6-8 minutes.
Add Vegetables
  1. Add minced garlic and cherry tomatoes to the skillet. Sauté for 2-3 minutes until the tomatoes begin to soften.
Cook Orzo
  1. Stir in the orzo and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 10-12 minutes until the orzo is tender.
Finish the Dish
  1. Stir in the heavy cream, spinach, and parmesan cheese. Cook for an additional 2-3 minutes until the spinach is wilted and the sauce is creamy.
Serve
  1. Remove from heat and serve warm, garnished with extra parmesan if desired.
