Ingredients
  

Slaw
  • 2 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1 cup red bell pepper thinly sliced
  • 1 cup green onions sliced
  • 1 cup fresh cilantro chopped
  • 1/2 cup peanuts chopped or crushed
Peanut Dressing
  • 1/4 cup peanut butter smooth
  • 2 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 clove garlic minced
  • 1 teaspoon ginger grated
  • 2 tablespoons water to thin if necessary

Method
 

Prepare the Slaw
  1. In a large mixing bowl, combine the shredded cabbage, carrots, red bell pepper, green onions, cilantro, and peanuts.
Make the Dressing
  1. In a separate bowl, whisk together the peanut butter, soy sauce, maple syrup, rice vinegar, sesame oil, garlic, ginger, and water until smooth.
Combine and Serve
  1. Pour the peanut dressing over the slaw and toss until everything is well coated. Serve immediately or chill for 30 minutes for flavors to meld.
