- In a small saucepan, simmer 1.5 cups apple cider over medium heat for 15 minutes until reduced to exactly 1/2 cup of deep amber syrup. Let cool for 10 minutes.
- Preheat oven to 350°F (175°C). Generously grease two 6-cavity donut pans with melted butter or baking spray.
- In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, allspice, and salt.
- In a medium bowl, whisk together melted butter, egg, brown sugar, white sugar, buttermilk, vanilla, and the cooled cider reduction until glossy.
- Fold wet mixture into dry ingredients with a spatula just until combined—do not overmix. Transfer batter to a piping bag.
- Pipe batter into donut cavities filling 3/4 full. Bake at 350°F for 11 to 13 minutes until springy to the touch. Cool 5 minutes, then unmold onto a rack.
- Dip warm donuts on both sides into melted butter, then roll generously in cinnamon sugar until thickly coated. Serve warm!
