Ingredients
  

Watermelon Jello Base
  • 2 cups watermelon juice freshly blended
  • 1 cup water for dissolving gelatin
  • 2 tablespoons granulated sugar optional, adjust to taste
  • 1 packet unflavored gelatin about 2 1/2 teaspoons
Optional Garnish
  • 1 cup cubed watermelon for serving
  • 1 tablespoon mint leaves for garnish

Method
 

Prepare Watermelon Juice
  1. Blend fresh watermelon chunks until smooth, then strain to remove pulp, yielding about 2 cups of juice.
Dissolve Gelatin
  1. In a small bowl, sprinkle the unflavored gelatin over 1 cup of cold water and let it sit for about 5 minutes to bloom.
Combine Ingredients
  1. In a mixing bowl, combine the watermelon juice and sugar (if using). Heat the bloomed gelatin in the microwave for 15-20 seconds until dissolved, then stir it into the watermelon mixture.
Set Jello
  1. Pour the mixture into jello molds or cups and refrigerate for at least 4 hours or until fully set.
Serve
  1. Once set, unmold the jello and serve with cubed watermelon and mint leaves as garnish.
