How to Make food breakfast

Follow these simple steps to prepare this delicious food breakfast:

Step 1: Preheat the Oven
Begin by preheating your oven to 200°C (180°C fan/gas mark 6). This ensures your tortillas turn crisp and golden.

Step 2: Prepare the Tortillas
Brush two baking trays with 2 teaspoons of the vegetable oil and lay the mini tortillas out flat. Lightly season with salt. Bake them for 5 minutes, then flip them over. Rotate the trays and cook for another 3 minutes until they’re wonderfully crispy. Once done, remove them from the oven and let them cool.

Step 3: Sauté the Vegetables
In a large frying pan, heat 1 teaspoon of the oil over medium-high heat. Toss in the courgette chunks and sweetcorn. Stir occasionally, cooking for about 6-8 minutes until they’re slightly golden and tender. Sprinkle in the smoked paprika and stir for an additional minute before removing from the heat.

Step 4: Combine the Fresh Ingredients
Once your sautéed veggies have cooled slightly, add the halved cherry tomatoes and finely sliced spring onions to the pan. Season this delightful mix to taste, allowing the flavors to harmonize beautifully.

Step 5: Prepare the Pea Dip
In a mini food processor, combine the defrosted peas, peeled garlic, mint leaves, most of the chopped coriander, lime juice, and the remaining oil. Add some seasoning and pulse until the mixture reaches a guacamole-like consistency. If it’s too thick, feel free to add a splash of water.

Step 6: Assemble the Tacos
To serve, take your crispy tortillas and spread a generous layer of the pea dip over each. Top with the sautéed veggie mix and garnish with the remaining coriander. For the finishing touch, add a dollop of natural yogurt atop each taco and serve with lime wedges on the side for that extra zing.

Get ready for a delightful taco experience that connects you to your taste buds in the most vibrant, comforting way! These Tortilla Veggie Tacos will give your breakfast a fresh twist that even your sleepiest morning self will thank you for. Whether you’re having a laid-back weekend or a busy weekday, this food breakfast will become a go-to recipe that brings joy to your kitchen. Enjoy the fiesta on your plate!
