IRRESISTIBLE Balsamic Potato Salad

Ingredients
  

Potatoes
  • 2 pounds baby potatoes halved
Dressing
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup fresh basil chopped

Method
 

Prepare the Potatoes
  1. Place the halved baby potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes.
  2. Drain the potatoes in a colander and let them cool for a few minutes.
Make the Dressing
  1. In a mixing bowl, whisk together the balsamic vinegar, olive oil, Dijon mustard, minced garlic, honey, salt, and black pepper until well combined.
Combine Ingredients
  1. In a large bowl, combine the cooled potatoes, cherry tomatoes, cucumber, red onion, and fresh basil.
  2. Pour the dressing over the salad and toss gently to coat all the ingredients.
Serve
  1. Serve immediately or refrigerate for 30 minutes to let the flavors meld before serving.
