Ingredients
  

Lamb
  • 1 rack rack of lamb about 1.5 to 2 pounds
Herb Crust
  • 2 tablespoons Dijon mustard
  • 1 cup fresh breadcrumbs
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Season the rack of lamb with salt and pepper.
  3. In a mixing bowl, combine Dijon mustard, breadcrumbs, rosemary, thyme, garlic, and olive oil to form a paste.
Cooking
  1. Heat a roasting pan over medium-high heat and sear the lamb on all sides until browned, about 2-3 minutes per side.
  2. Remove the lamb from the heat and spread the mustard and herb mixture evenly over the meat.
  3. Transfer the lamb to the oven and roast for 25-30 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare.
  4. Let the lamb rest for 10 minutes before slicing.
