Mushrooms and Vegetables
  • 1.5 pounds baby portobello mushrooms
  • 2 tablespoons butter
  • 0.25 cup diced yellow onion
  • 0.5 cup chopped oil-packed sun-dried tomatoes
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 2 cups chopped spinach
  • Salt to taste
  • Pepper to taste

Cooking Steps
  1. Rinse and pat dry the mushrooms, removing any debris.
  2. Heat a large, heavy bottomed skillet over medium heat. Add the butter to the skillet.
  3. When the butter has melted add the onion and cook for 5 minutes, stirring often, to soften onions.
  4. Add the sun-dried tomatoes and garlic and cook for 2-3 minutes.
  5. Add the mushrooms to the skillet and cook, stirring often, about 5 minutes.
  6. Add the heavy cream to the pan and let cook for 1-2 minutes to warm through.
  7. Add the spinach and stir well. Continue cooking over low heat until spinach has wilted and sauce has thickened slightly, about 3 minutes.
  8. Season with salt and pepper, to taste and serve hot.
